Feel Your Best to Be Your Best

Pumped up Pumpkin Waffles

I truly believe that to be your best you need to feel your best. I am always looking for delicious healthy recipes to keep my family powered up. This recipe comes from my good friend Donna who has a way of creating incredibly delicious, power packed, healthy recipes. This is one of my favorites, and one I will be making for my family Christmas Morning! When she makes these, she doesn't even tell people how healthy they are and they are gone in a flash!

If I’m going to make a mess in the kitchen, I like to increase the benefits. Here I have added hemp powder and cocoa powder for a delicious power packed breakfast. Make the batch and freeze the extras. Create a sandwich by spreading almond butter topped with grape slivers and quarter for a healthy snack at book club or bunco!

¼ cup hemp protein powder

1 tablespoon vanilla

¼ cup cocoa powder

4 eggs

¼ cup maple syrup

1 tsp cinnamon

¼ cup coconut oil

1 tsp baking soda

1 large yellow plantain or 2 yellow bananas

½ tsp salt

1 cup pureed pumpkin or pureed sweet potato

Combine all the ingredients in a blender or food processor and then cook with a waffle iron using cooking spray.

Finish them off with your favorite waffle toppings. Picture shown is topped with coconut cream, frozen blueberries and pumpkin pie spice. Enjoy!
